A 5* upmarket Hotel with over 100 rooms seeks to employ an experienced Executive Sous Chef with the following ESSENTIAL REQUIREMENTS!
- Matric
- Professional Cookery Diploma with HACCP knowledge
- Must have 5 years experience within a 4 or 5 * hotel with banqueting for at least 1000 pax, the proeprty has over 10 banquet venues and can serve up to 1500 pax.
- Knowledge of costing, controls are a must, must be able to oversee multi-outlets
- Must currently be holding the position of Exec Sous in a 4 or 5 * Hotel environment
- The ideal candidate will need to have good staff management skills be able to mange costs and controls
- Own car and license will be a distinct advantage
- Responsibilities include:
Write SOPs for every product and service that leaves the kitchen and then be diligent on the execution of all SOP’s. You need to be the example.
- Submit monthly stocktakes on food and operational equipment.
- Achieve food cost monthly
- Work hand in hand with the Executive Chef to manage all areas of the kitchen
- Assist with development of the chefs through a skills assessment and then a structured “on job training” program.
